Huma's Barista Chicken

Ingredients:-
- 500g boneless chicken, cut into pieces
- 1 cup premade fried onions
- 2 to 3 medium-sized tomatoes, steamed and puréed
- 4-6 green peppers, whole
- 4 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 green chilies, finely chopped (adjust according to your spice preference)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves for garnish
- Cooking oil for frying and cooking

Instructions:-
1. Heat oil in a pan and add cumin seeds. Let them splutter for a few seconds.
2. Add the chicken pieces to the pan and stir-fry them until they are lightly browned on all sides.
3. Add minced garlic and grated ginger to the pan. Sauté for a minute until they become aromatic.
4. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another minute.
5. Add the steamed and puréed tomatoes to the pan. Mix well and cook for a couple of minutes.
6. Now, add the green peppers and chopped green chilies to the pan. Sauté for a couple of minutes until the peppers are slightly tender.
7. Cover the pan and let the chicken cook on medium heat until it is tender and cooked through. Stir occasionally to prevent sticking.
8. Crush the premade fried onions and add them to the pan. Mix well to combine all the flavors.
9. Cook for another 2-3 minutes until the flavors meld together.
10. Sprinkle garam masala powder and give it a final stir.
11. Garnish with fresh coriander leaves.
