Huma's Pistachio Cake Recipe

❤️?‍?✨Reshuffling my memories and pictures from visiting Istanbul today i recollected and fell in love again with the vibrant flavors of the city, especially the pistachios. The memories of bustling Spice Bazaar and the aroma of freshly ground pistachios inspired me to create a pistachio cake that would transport me back to those magical moments. Back home today as I gathered the ingredients, the scent of ground pistachios filled my kitchen, reminiscent of the vibrant markets. The cake's sweet aroma captured the essence of Istanbul. And with each bite, I was transported back to the narrow streets, the calls of street vendors, and the enchantment of the city. I think this pistachio cake has became my personal ode to the flavors and memories of that remarkable journey. Now, whenever I will bake it, it will rejuvenate the feeling abd would serve as a reminder of the beauty of travel, the power of food and the joy of recreating those experiences in my kitchen. Ingredients:-
- 1 and 1/2 cups shelled pistachios
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 and 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- Green food coloring (optional)
- Whipped cream and additional pistachios for garnish (optional)
- 3/4 cup milk

Instructions:-
1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a food processor, pulse the shelled pistachios until finely ground. Be careful not to over-process, or they may turn into a paste.
3. In a mixing bowl, whisk together the ground pistachios, all-purpose flour, baking powder, and salt. Set aside.
4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use a hand mixer or a stand mixer for this step.
5. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next one. Stir in the vanilla extract.
6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. If desired, add a few drops of green food coloring to enhance the cake's color.
7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
8. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
10. Once the cake has cooled, you can frost it with whipped cream and garnish with additional pistachios if desired. Slice and serve!
