Huma’s Fluffy Pancakes with homemade cranberry sauce

- 2 tablespoons melted butter

- 1 cup fresh or frozen cranberries
- 1/2 cup brown sugar
- 1/4 cup water

2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
3. Gently fold the wet ingredients into the dry ingredients, mixing until just combined. It's okay if the batter is a bit lumpy. Make it into a smooth batter. When you insert a spoon the layer should cover the surface of the spoon yet still dripping.
4. Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or cooking spray.
5. Pour 1/4 cup of batter for each pancake onto the pan. Cook on low to medium heat until bubbles form on the surface, then flip and cook until golden brown on the other side.
6. Repeat with the remaining batter.
