Huma’s Malai Tangri Kebab - My super easy version 😊😉
- 12 chicken drumsticks |
- 2 tbsp ginger garlic paste |
- Juice of 1 lemon |
- 2 tsp chaat masala |
- Salt to taste |
- 2 tsp garam masala |
- 4 tbsp cream cheese spread |
- 1 cup dahi (plain yogurt) |
- Charcoal for smoking |
- Ghee or oil for shallow frying |
Instructions:- |
1. *First Marination:* |
- In a large bowl, mix the ginger garlic paste, lemon juice, chaat masala, and salt. |

- Cover the bowl and refrigerate for at least 1 hour. |
2. *Second Marination:* |
- In another bowl, mix garam masala, cream cheese spread, dahi, and salt. |
3. Cooking step # 1 |
- Heat ghee or oil in a shallow pan over medium heat. |
- Place the marinated drumsticks (after applying only first marination) in the pan and cook until they are golden brown and half cooked through, turning occasionally. |
- Create a small well in the center of the pan and place a small bowl or foil filled with a piece of glowing charcoal. Pour a little ghee or oil over the charcoal and cover the pan immediately to infuse the drumsticks with a smoky flavor. Let it sit for 10 minutes. |
After smoking, remove the charcoal and cool the drumsticks completely. Now cover the drumsticks with the second marination until it’s well coated on both sides and no liquid is dripping. |
4. Cooking step # 2 |
- Cook the drumsticks on a direct flame on stove or gas turning occasionally, until they turn golden yummy brown. |
Serving: |
- Once cooked, transfer the Malai Tangri to a serving platter. |
- Garnish with fresh coriander leaves, lemon wedges, and chaat masala if desired. |
- Serve hot with naan, roti, or rice. |
