Jamaican Fish Fry

Jamaican Fish Fry - with Indian masala twist ✨👩‍🍳💕

Ingredients:-
- 2 lbs/ 1kg red snapper fish, cleaned and cut into slices or any other whole fish of your choice.
- 3-4 tablespoons of red chili powder
- 1 tablespoon turmeric powder
- 2-3 tablespoons of ginger-garlic paste
- Salt to taste
- Vegetable oil for frying
- 2-3 tablespoons of tamarind paste or juice of 1-2 limes
- Fresh coriander leaves for garnish
- white vinegar or apple cider vinegar
-2 tbs mix sabut garam masala

Instructions:-
1. Wash the fish slices and pat them dry with a paper towel. This helps the marinade stick better to the fish.
2. In a bowl, mix the red chili powder, turmeric powder, ginger-garlic paste, lemon, vinegar and salt to form a thick marinade.
3. Rub the marinade onto the whole fish ensuring it is evenly coated. You can marinate the fish for about 30 minutes to allow the flavors to penetrate. Now sprinkle the sabut garam masala on top of the fish. You will be amazed how this brings such heavenly flavor to the fish!!
4. Heat vegetable oil in a frying pan or iron skillet over medium heat. Once the oil is hot, carefully place the fish slices into the pan. Fry the fish until it is golden brown ( covered ) on both sides and cooked through. This should take about 5-7 minutes per side, depending on the thickness of the macchi 😊
5. Once the fish is fried, either remove it from the pan and place it on a plate lined with paper towels to drain any excess oil. Or you can serve directly from the skillet !! That’s what I do ! Lol
6. In a small bowl, mix the tamarind paste or lime juice with a little salt. Use this as a dipping sauce for the fish.
7. Garnish the fish with fresh coriander leaves before serving.
Optional step - Sauté your favorite vegetables in a pan with some sea salt, pepper, garlic and hara dhaniya and place the veggies on the same skillet as fish so as to roast a bit ! I used yams (shakar kandi ) in this recipe!
