Huma’s Green Goddess Chicken - inspired by American Green Goddess Salad but with Indian masala twist 😉✨👩🍳💕 Recipe 👇🏻👇🏻
"Ingredients: For chicken 1st marination " |
- 8 chicken drumsticks or thighs only |
- Salt and pepper to taste |
- 1 teaspoon red chili powder |
- 1/2 teaspoon turmeric |
- 2 tablespoons olive oil |
-1/2 teaspoon garam masala |
-1 teaspoon ginger garlic paste |
"Ingredients For the Green Goddess Dressing: 2nd marination " |
- 1/2 cup chopped green onions |
- 1/2 cup cashews |
- 1/2 cup cream ( save about 2 tbs for garnish) |
- 4 tbs cilantro chutney ( hara dhaniya chutney) or simple 1/4 cup hara dhaniya and 1 green chilly bhi chalega !!! |
-1 bunch of spinach |
- Salt to taste |
- 1/2 teaspoon fruit chaat masala (any brand) |
Instructions:- |
1. You need Preheated oven to 400°F (200°C) for this recipe. |
2. To make the green goddess dressing, blend together green onions, cashews, green chutney, spinach, fruit chaat masala, salt to taste in a blender. Roll in the fresh cream in the mixture but don’t blend or it will leave its butter so you want to avoid that 🤨 !!! Keep this dressing aside! |
3. Marinade the chicken thighs with all above masala (1st marination) and keep it aside for 2 hrs or more. Now coat the chicken pieces with the green goddess dressing we have made and transfer in a baking dish. |
4. Place the baking dish to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C). |
5. Once done, remove the chicken from the oven and let it rest for a few minutes before serving. |
6. Garnish with a drizzle malai or cream and some fresh chopped herbs if desired. |
Feel free to cut some potatoes and place in the same baking dish as the chicken to serve along ! The yummy green dressing and juices will make the potatoes so flavorful ✨😋 |
