- 16 ounces of bow tie pasta |
- 1 pound of minced meat (beef, turkey, or chicken) |
- 3 tablespoons olive oil |
- 4 cloves garlic, minced |
- 1 large onion, chopped |
- 2 cups of diced bell peppers (assorted colors) |
- 2 cups of sliced mushrooms |
- 2 cups of cherry tomatoes, halved |
- 2 cups of broccoli florets |
- 1 cup of grated Parmesan cheese |
- Salt and pepper to taste |
- Fresh or dry oregano for garnish |
Instructions:- |
1. Preheat your oven to 350°F (175°C). |
2. Cook the bow tie pasta in lots of water adding salt. Drain and set aside. |
3. In a large skillet, heat the olive oil over medium heat. Add the minced meat, breaking it apart with a spoon, and cook until browned. |
4. Add the minced garlic and chopped onion to the skillet with the meat and cook for a few minutes until the onions are translucent. |
5. Add the diced bell peppers, sliced mushrooms, cherry tomatoes, and broccoli florets to the skillet. Sauté for 3-5 minutes until the vegetables. |
6. Season with salt and pepper to taste. |
7. Transfer the mixed pasta primavera into a large baking dish. Sprinkle some extra Parmesan cheese on top. |
8. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and the pasta is heated through. |
9. Serve the pasta primavera in individual dishes, garnished with fresh basil leaves or oregano . |
