Huma’s savage Pav Bhaji

Ingredients:-
- 3-4 medium potatoes, peeled and cubed
- 1 cup cauliflower florets
- 1 cup green peas
- 1 cup carrots, diced
- 1 medium capsicum, diced
- 1 large onion, finely chopped
- 4-5 cloves of garlic, minced
- 3-4 tomatoes, finely chopped
- lots of butter- 1/2 cup
- 2 tbsp oil
- 2-3 tbsp pav bhaji masala
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- Salt to taste
- 8-10 pav (dinner rolls)
- Butter for toasting the pav
- Chopped coriander leaves for garnish
- Lemon wedges

Instructions:-
1. Steam the potatoes, cauliflower, green peas, carrots, and capsicum until they are soft. Once done, set aside. I steamed my veggies in microwave 😉
2. In a large pan, heat the oil and 2 tbsp of oil over medium heat. Add cumin seeds and let them splutter.
3. Add the chopped onions and sauté until they turn translucent. Then, add the minced garlic and sauté for another minute.
4. Add the chopped tomatoes and cook until they turn soft and the oil begins to separate.
5. Now, add the steamed vegetables to the pan and mash them directly in the pan using a potato masher. Mix them well with the masala.
6. Add the pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes. Add 2 cups of water and cook on very slow flame for 15-20 min until all vegetables and masala become a nice consistency! Let it simmer.
7. While the bhaji is simmering, slice the pav horizontally without cutting all the way through. Spread some butter on the cut sides and toast them on a griddle until they are golden brown.
8. Once the bhaji is ready, add 1/4 cup of white butter ( maska), chopped coriander. Add a dollop of butter. Don’t be stingy 🤨😊😉. You can use Amul butter also !
9. Serve the hot pav bhaji with the butter-toasted pav and some lemon wedges, onion and green chilies on the side.
