Instructions:- |
| 1. Preheat your oven to 375°F (190°C). |
| 2. Thaw the pre-made puff pastry sheets according to the package instructions. Once thawed, gently roll out the sheets and cut them into squares large enough to fit into a muffin tin, with some overhang. |
| 3. Gently press each square of puff pastry into the cups of a muffin tin, allowing the corners to overlap and create a rustic look. |
| 4. Spoon leftover bhaji or mixed vegetables into each puff pastry cup, filling them about halfway. |
| 5. In a small bowl, beat the eggs and season with salt and pepper. Pour the beaten eggs over the vegetable-filled pastry cups, ensuring an even distribution. |
| 6. Sprinkle shredded cheese on top of each cup, covering the vegetables and egg mixture. |
| 7. Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the pastry is golden brown and the egg is set. |
