Huma’s Italian Minestrone Soup - super heart warming, undeniable love ! ✨👩🍳💕
-any kind of mini pasta - 2 cups boiled |
- 1 tablespoon olive oil |
- 1 medium onion, diced |
- 3 cloves garlic, minced |
- 1 teaspoon grated ginger |
- 1 cup cauliflower florets |
- 1 cup broccoli florets |
- 2 carrots, diced |
- 1/2 cup peas |
- 1/2 cup snap peas |
- 6 cups water |
- 2 cubes of halal Maggie chicken bouillon |
- 2 tablespoons cornstarch |
- Salt and pepper to taste |
- 1 orange, juiced |
- Fresh cilantro for garnish |
Instructions:- |
1. Steam the cauliflower, broccoli, carrots, peas, and snap peas until they are tender yet still slightly crisp. Set aside. |
2. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. |
3. Add the minced garlic and grated ginger, and cook for another 2 minutes until fragrant. |
4. Add the steamed cauliflower, broccoli, carrots, peas, and snap peas to the pot, and stir to combine with the onion, garlic, and ginger mixture. |
5. Pour in the water and add the halal Maggie chicken bouillon cubes. Bring the soup to a boil, then reduce the heat and simmer for about 10-15 minutes. Add the boiled pasta. |
6. In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Slowly pour this slurry into the soup, stirring constantly, until the soup thickens slightly. |
7. Squeeze the juice of one orange into the soup, stirring to incorporate the sweet and tangy flavor. |
8. Taste the soup and adjust the seasoning with salt and pepper as needed. |
9. Serve the minestrone soup hot, garnished with fresh cilantro. |
