Weekend special feast : Baraat wala khana ✨💕👩🍳(Moradabadi Biryani and Desi Ghee ka Qorma) Huma’s Moradabadi Yakhni Pulao Biryani ✨👩🍳
- 1 kg lamb or chicken, cut into pieces |
- 1 tablespoon ginger paste |
- 1 tablespoon garlic paste |
- 1 teaspoon cumin seeds |
- 1 teaspoon black peppercorns |
- 8-10 green cardamom pods |
- 8-10 cloves |
- 1-inch cinnamon stick |
- Salt to taste |
- 6 cups water |
-a muslin cloth or a tea infuser gadget for making potli of masala to infuse all flavors in the Yakhni. |
-3 green chillies whole or cut in half |
-4 tablespoons ghee or oil for bhagaar |
-4 tablespoons ghee or oil for Yakhni |
- 1 large onion thinly sliced for bhagaar |
-6 cups basmati rice - soaked for half n hour |
Instructions:- |
1. In a large pot, combine the lamb or chicken pieces with oil, ginger paste, garlic paste. Make a potli of sabut masala or use a tea infuser gadget to fill all masala in to cook in Yakhni (cumin seeds, black peppercorns, cardamom pods, cloves, cinnamon stick ) |
2. Add 6 cups of water. Bring it to a boil, then reduce the heat and let it simmer for about 30 minutes to 40 min until the meat is tender and the stock is flavorful. Keep the stock aside. |
3. In a large, heavy-bottomed pot add the soaked rice with the meat / chicken with yakhni (stock) . Mix gently to coat the rice with the flavors. |
4. The level of the stock should be about 1 inch above the rice. Add cut green chillies. |
5. Cook the rice on open flame on high until you see the water has settled a bit. Now cover the pot with a tight-fitting lid or put an aluminum foil on the utencil under the lid and cook on low heat for 15-20 minutes on low flame until the rice is fully cooked and aromatic, and the liquid is all absorbed. |
6. Once done, garnish with fried onions. |
7. In a bowl take some kewra water and add the yellow food color along with 3tbs of water. Pour it over the cooked rice for that beautiful yellow saffron color! |
8. Carefully roll the rice upside down with a spatula to fluff the rice grains and open up!! |
Serve hot with boondi raita or chilly garlic chutney. |
