Huma’s Roasted Cauliflower and Chickpea Salad for 4 - Tossed with homemade yogurt almond dressing. ✨💕👩🍳
- 1 head of cauliflower, cut into florets |
- 1 big cup of boil chickpeas (chana), drained and rinsed |
- Sea salt to taste |
- Pepper to taste |
- Cajun seasoning or red chili powder or any of your favorite seasoning. Feel free to use chaat masala dahi bada masala !! |
- Dry parsley or dry cilantro (hara dhaniya) |
- Mixed greens (spinach, kale, argula) it any vegetable leafs that you usually throw away. Wash nicely and drain. Pat fry with towel or paper! |
- Cherry tomatoes, halved or 2 whole tomatoes cut into cubes |
- Peanuts |
- Cucumbers, sliced |
- Dates, chopped |
- Artisan bread or whole wheat bread |
- Cheese of your choice |
Dressing: |
- Handful of almonds |
- Greek yogurt or dahi with drained out water. |
- Sea salt |
- Dry parsley |
- Olive oil |
- Apple cider vinegar |
Instructions:- |
1. Preheat the oven to 400°F (200°C). |
2. In a bowl, toss the cauliflower florets and chickpeas with sea salt, pepper, Cajun seasoning or red chili powder, and dry parsley. |
3. Spread the seasoned cauliflower and chickpeas on a baking sheet and roast for 25-30 minutes or until golden brown and crispy. |
4. While the cauliflower and chickpeas are roasting, prepare the dressing. Blend almonds, green yogurt, sea salt, dry parsley, olive oil, and apple cider vinegar until smooth. |
5. In a large bowl, combine the mixed greens, cherry tomatoes, peanuts, sliced cucumbers, and chopped dates. |
6. Once the cauliflower and chickpeas are done, add them to the bowl with the salad ingredients. |
7. Pour the dressing over the salad and toss until everything is well coated. |
8. Toast the artisan bread and serve with cheese of your choice. |
9. Divide the salad onto plates and serve with the toasted artisan bread. |
