Huma’s Turkish Fatayer (Turkish Pizza) with three different Toppings: ✨💕👩‍🍳

- For the dough:
- 1 package of ready-made pizza dough or homemade dough. For dough recipe see below at the end ✨👩‍🍳
- For Minced Meat Topping ✨
- 1 pound minced meat or chicken
- 1 full garlic chopped
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon allspice or garam masala sabut
- 1 teaspoon red chilly powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon keema masala (any brand) optional
- Salt and pepper to taste
- For Minced Meat and Cheese Topping✨
- 1 pound cooked minced meat or chicken (as above)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
- For Bell Pepper, Mushrooms, Onions, and Olives Topping✨
- 1 cup tomato purée (optional) (- 1 bell pepper, sliced )
(- 1 cup mushrooms, finely sliced ) (- 1 onion, finely sliced) (- 1/2 cup sliced olives)

- 4 cups all-purpose flour
- 1 tablespoon active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 1/2 cups warm water
- 1/4 cup olive oil

1. Preheat the oven to 375°F (190°C).
2. Prepare the fillings: 👩‍🍳 For Minced Meat : In a pan, heat olive oil and sauté the garlic until it’s translucent. Add the minced meat, allspice, salt, and pepper, red chilly powder, turmeric, keema masala and cook until the meat is browned.
3. Roll out the dough and cut it into circles and roll them in oval shape.
4. Place a line of cheese on the edges of the dough and fold the edges pinching the corners to seal.
5. Layer the desired filling in the center (meat filling OR meat and cheese filling OR vegetable filling)
5. Brush the fatayer with the beaten egg and sprinkle some sesame seeds if desired.
6. Bake for 15-20 minutes, or until the dough is golden brown.

1. In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
3. Mix the ingredients together until a dough forms. Then, transfer the dough to a floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
5. Once the dough has risen, punch it down to release the air, then divide it into three equal portions.
You can use each portion to make a pizza of your choice, such as the Turkish Fatayer with different fillings we discussed earlier. After adding the desired fillings, bake the pizzas in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the crust is golden brown and the cheese is bubbly.
